Nick Malgieri is one smart cookie. He opens Chocolate with information about all the basics on our favorite sweet's history and production. He then moves right into 360 recipes.

Chocolate provides recipes for every intensity of chocolove and all levels of culinary skills. There are simple mix-bake-cut cakes, a mud-rich fudge sauce that hardens on ice cream, a collection of ice creams to go with it, and a killer Rich Chocolate Mousse.

Any comfortable cook, particularly one who's mastered the techniques in How to Bake, Great Italian Desserts, and Malgieri's other equally clear and precise works, can turn out Cream Puff Truffles, Chocolate Brownie Tart, a French Buche de Noel, and most of the other recipes in this dessert-lover's dream book.

Dedicated amateurs and professional cooks will appreciate Malgieri's explicit guidance for the process of tempering, which is necessary for making certain chocolate confections, and the recipes for European-style molded confections such as liqueur-filled cordials, and hand-dipped masterpieces, including Raspberry Tricolors. Less ambitious chocoholics might attempt the 26 kinds of truffles or play with Chocolate Plastic for making decorations. And no one should miss Chocolate's final chapter, the over-the-top "Showpieces and Decorating Projects."

This book is lavish with color photos. The chapter openings, shot with the artistry of Irving Penn still lifes, are so breathtaking you can taste them. --Dana Jacobi

Book Description

Nick Malgieri, who taught us everything we need to know about baking in How to Bake, takes on chocolate, the world's favorite food. With the authoritative accessibility he brings to his teaching, Nick bridges the gap between the professional baker and the home cook. He knows techniques and ingredients and he teaches them with hand-holding efficiency. In ten chapters, Nick offers a primer on basics and every kind of chocolate from coca to chips and white chocolate (and why it isn't really chocolate in the strictest sense) to big dark slabs of the world's favorite luxury food and the many, many ways to enjoy it.

Information on storage, handling, and the fundamentals needed to create chocolate confections is clear and concise. Recipe sections include everything you need to know to turn the food of the gods into desserts for us mortals: cakes and cookies, creams and custards, ice creams, pies and pastries, sauces and beverages, truffles and pralines, dipped and molded chocolates, all adapted for the home cook.

Illustrated with four-color photographs throughout, all 380 luscious recipes will send a shiver of delight down the spine of every chocolate lover. Chocolate is definitive without being intimidating; it is a true home companion for anyone who wants to cook with chocolate.

4 out of 5 stars Chocaholic Must Have.......2006-05-08

Its the most expensive book that I've got in by collection, well.. glad to say that I think I used my peso(Philippine Money) wisely coz I haven't regretted this purchase. So far since last christmas season when I first got it, I tried 3 recipes all successful. Its the first time I made brownies where the middle isn't raw which is a good thing, coz that has been my problem ever since. Not any more! The pictures are fantastic but I with there could be more, I mean who gets tired of looking at chocolates? Nobody that I know :)

4 out of 5 stars Chocolate made easy.......2005-07-25

I bought this book for two reasons: first, I am a chocophile. Second, Malgieri's reputation. I have his book "How to Bake," which is excellent and all the recipes I've tried work. That is one of his fortes. I can't tell you how frustrating it is to plunk down a chunk of money for a cookbook with recipes that don't work. These do.

My one an only criticism is that he's not a chocolate fanatic in the true sense. His information and recipes are good not great. If you want the definitive work on Chocolate by a true connoisseur get "Death by Chocolate" by Marcel Desaulniers...exquisite! Malgeiri's book, however, is good in it's own right and deserves a spot on your book shelf.

4 out of 5 stars Good Book, Not as Great as His Others.......2005-03-24

I have tried several recipes from this book. All have turned out well or excellent(just by following his detailed recipes), but none have produced to-die-for results. Which is disappointing with a chocolate book. And considering I am a big fan of his other books, this is a double disappointment. I do find his recipes helpful, there are many tips on getting a good result in the intructions, and lots of pictures. The first chapter does a crash course in chocolate, which is limited, but is all one, who does not work in culinary arts, needs to know. The recipes range from cakes, cookies, breads, ice cream, drinks and candies. If you are looking for a good, all-around chocolate book, this one should be considered.

3 out of 5 stars A Mediocre Chocolate Book.......2004-07-30

The author is famous and comes with quite a pedigree. In the introductory material, he festoons the reader with stories of working in Europe with the finest confectioners and chocolatiers; unfortunately, this experience does not seem to be reflected in the recipes of this rather ordinary book on chocolate. In the end, I suggest that you forget this book and instead pick up one of the many fine chocolate cookbooks put out by Hershey's.

The first dozen or so pages cover equipment, chocolate, ingredients, tempering, etc. It is brief, declamatory, and useless. The instructions for Buche de Noel were extensive, imprecise, and confusing. Some of the cake assembly requires professional techniques, none of which is explained. I laughed when the author expects people to have an oven big enough to accommodate 4 cookie sheets at the same time (in the recipe for his recreation of LeNotre's Concorde Cake). Molded cakes are no easy matter, and the instructions in this book are woefully inadequate. For Rigotorte, the author casually tosses off the recipe for a chocolate pate sucree in 3 sentences; properly treated, this basic but not easy recipe should take 3 pages. The instructions for tempering chocolate are sufficient only for someone who has done it before. The last chapter has several worthwhile showpieces (suitable only for those with some experience), but it could use a few more pictures.

The most basic recipe in the book, genoise, is the oddball version that uses a substantial amount of cornstarch; it does work, but is inferior to the standard version using all flour. A good genoise should also use butter which his does not, but he gets a pass; on the other hand, the recipe gives rather fuzzy directions for how long to beat the batter. The other basic cake, chocolate sponge, uses the separated egg sponge method, but also atypically has cornstarch. Inexplicably, the angel food cake uses self rising flour, which has baking powder; the main reason to make angel food cake is to avoid the use of chemical leaveners.

The physical construction of the book is like a college textbook: heavy duty and durable with thick, glossy pages. The graphics and design are exemplary. The beginning of each chapter has a list of all recipes, a welcome convenience; strangely, the page numbers are not listed, so you still have to do some page flipping to find anything. It has: basics, cakes, cookies, custards, frozen, pies, candy, drinks, and decorations. The chapters on cakes, pies, and cookies were disappointing; the ones on frozen desserts and candy were very good. The chocolate decorations were very interesting, but the instructions were not sufficiently detailed for the novice.

On the good side, the author is always careful to specify what type of cocoa powder to use, and all recipes have storage specifications. On the bad side, the flour amounts do not have weight equivalents, and the temperature of the eggs is never specified. Overall, I was more impressed with the quantity rather than the quality of the recipes.

3 out of 5 stars Very disapointed.......2004-04-30

I expected much more from Nick Malgieri, been a teacher and all, at least foolproof recipes!!! I personaly made some and others , been a pastry chef, didn't even try because they were oversimplyfied and they would not achieve the best result. Too bad.

4 out of 5 stars Fun with food.......2006-02-18

Through my job in the kitchen appliance industry, I was lucky enough to see Bob Blumer do his thing in a very intimate (about 10 people) setting. From the moment he showed up wearing an AC/DC t-shirt and a pair of outrageous chef's pants, I knew this was going to be a lot more fun than the typical Food Network cooking shows(except maybe maybe Giada's Everyday Italian...but that's for different reasons).
Besides tasting great, the foods he prepared were just downright funny! He was very personable and had a great sense of humor which is reflected throughout this entire book.
I wasn't going to give this book 5 stars simply because these are just not foods you can prepare on any sort of a regular basis. They are mostly meant to be...for lack of a beeter way to describe it....different. But I reconsidered and gave it 5 stars anyway because it's just so damn funny and so damn original!
If you are going to a party, get-together or anytype of social event where food will be served, and you want your offering to be the talk of the moment...this is the book for you. Even if you're not a great cook or don't do such a hot job preparing these bites, the presentation alone will make you the hit! Check it out!

4 out of 5 stars GREAT NEW FOODS!.......2005-12-13

I tried the smores shooters, and coconut shrimp popsicles, the sauce on the shrimp popsicles tasted great like something you would get in a resteraunt.I also tried the bang bang drummettes, and the inside out BLTs which tasted great. Living in Colorado I enjoyed the smores shooters as they are a great treat to have before you go snowboarding!

5 out of 5 stars Artist Still Playing With His Food with Amuse-Bouche!.......2004-09-15

Teasers as warmup course, or appetizer feast, here is consummate surreal gourmet providing the inspiration with about fifty recipes composing sections on: fish, meat, fowl, veggies, sweets.

This continues his strong past of imaginative food with stylish twists of humor and fun with food. Try the likes of: Fish Cakes (salmon cupcakes with dill mashed potato icing); Cocktail Dates (bacon-wrapped parmesan-stuffed dates); Cowboy Cookies (chile-crusted tenderloin between carmelized yam slices); Inside Out BL's (bacon, arugula, and goat cheese sandwiched between fried tomato slices);Knuckle Sandwich (nutella, hazelnuts and sauteed pears on toasted pound cake).

Add to all this suggested menus, brief primer and notes oon frying and advance-prep ingredient handling, and suggested menus.

This is fun food, more lighthearted but serious food as well along the lines of Gale Gand's "Just A Bite" or her partner's Rick Tramonto's "Amuse Bouche."

This book is full of great alternative favorites for pianists at the grades 7- 10 level to give classical teachers much needed respite from the same- old same- olds. Plus it was a great price from Amazon. I bought it on line and had it shipped to Canada and still saved $7. It only took one week. Thank you!

        Book Description

The first major analyses of Busby Berkeley's career on stage and screen. Showstoppers emphasizes his relationship to a colorful, somewhat disreputable tradition of American popular entertainment: that of P.T Barnum, minstrel shows, vaudeville, Buffalo Bill Cody's Wild West Show, burlesque, and the Ziegfeld Follies. Rubin shows how Berkeley absorbed the declining theatrical tradition during his years as a Broadway dance director and then transferred it to the new genre of the early movie musical. With lively prose and engaging photographs, Showstoppers explores new ways of looking at Busby Berkeley, at the musical genre, and at individual film.

        Customer Reviews:

        5 out of 5 stars A Busby Berkeley Spectacular!.......2003-03-30

The "Berkeleyesque" dance number is one that "depends on sheer spectacle, on the deployment of hordes of chorus dancers in a grandiose setting." Ever since I became aware of Busby Berkeley's spectacular musical productions during a film history course in college 20 years ago, I've longed for a comprehensive look at his films and career. Showstoppers is the Berkeley Bible!

Showstoppers is divided into three parts, the first of which describes Berkeley's inimitable style, the elements that distinguish his work from others, and it's roots. Part II looks at his Broadway theater career during the second half of the 1920s. The meat of the story is presented in Part III, comprising 3/4 of the book, which describes in 7 chapters his cinema career spanning from 1930 to 1962. Each of his films is examined and includes references to the photos which are presented in two groups.

Showstoppers contains 248 pages of text plus 62 pages of production still photos of Berkeley's numbers. Although the black and white photos are not enlargements of actual frames from the films, they depict real sets and actors and, in some cases, show production equipment not visible in the film such as camera tracks in one instance. They are professionally lit, well printed and the captions informative. I highly recommend this book to any Berkeley buff, film fan, or lover of the musical spectacle on film.

Almost all the big band songs I've enjoyed over the years like Boogie Woogie Bugle Boy, and many others including lots of what are now jazz standards, many from 1930's movies, plus lots of Glenn Miller and Cole Porter hits. The sheet music seems like the original as published and is fairly easy to read. Most songs fit onto 3 pages.

I haven't seen any collection with anything close to as many of my favorite big band hits.

If only it were spiral bound or something so it would stay flat - I make copies of the sheets so I can keep them flat on the piano music stand

              Book Description

When it comes to the production and distribution of mass culture, no country in modern times has come close to rivaling the success of America. From blue jeans in central Europe to Elvis Presley's face on a Republic of Chad postage stamp, the reach of American mass culture extends into every corner of the globe. Most believe this is a twentieth-century phenomenon, but here Robert W. Rydell and Rob Kroes prove that its roots are far deeper.

Buffalo Bill in Bologna reveals that the process of globalizing American mass culture began as early as the mid-nineteenth century. In fact, by the end of World War I, the United States already boasted an advanced network of culture industries that served to promote American values. Rydell and Kroes narrate how the circuses, amusement parks, vaudeville, mail-order catalogs, dime novels, and movies developed after the Civil War—tools central to hastening the reconstruction of the country—actually doubled as agents of American cultural diplomacy abroad. As symbols of America's version of the "good life," cultural products became a primary means for people around the world, especially in Europe, to reimagine both America and themselves in the context of America's growing global sphere of influence. Paying special attention to the role of the world's fairs, the exporting of Buffalo Bill's Wild West show to Europe, the release of The Birth of a Nation, and Woodrow Wilson's creation of the Committee on Public Information, Rydell and Kroes offer an absorbing tour through America's cultural expansion at the turn of the century. Buffalo Bill in Bologna is thus a tour de force that recasts what has been popularly understood about this period of American and global history.
