ASIN: 0393062228 |
Book Description
Authentic recipes and fascinating tales from one of China's most vibrant culinary regions.
Fuchsia Dunlop is the author of the much-loved and critically acclaimed Sichuanese cookbook Land of Plenty, which won the British Guild of Food Writers' Jeremy Round Award for best first book and which critic John Thorne called "a seminal exploration of one of China's great regional cuisines." Now, with Revolutionary Chinese Cookbook, she introduces us to the delicious tastes of Hunan, Chairman Mao's home province.
Hunan is renowned for the fiery spirit of its people, its beautiful scenery, and its hearty peasant cooking. In a selection of classic recipes interwoven with a wealth of history, legend, and anecdote, Dunlop brings to life this vibrant culinary region. Look for late imperial recipes like Numbing-and-Hot Chicken, Chairman Mao's favorite Red-Braised Pork, soothing stews, and a myriad of colorful vegetable stir-fries. 65 color illustrations.
Customer Reviews:
A 'must' for any serious collection offering Chinese cookbooks beyond one or two basics........2007-07-08
The tastes and influence of the Hunan region of China are fully explored in Fuchsia Dunlop's Revolutionary Chinese Cookbook, which provides over a hundred dishes easy to make and accompanied by color photos and stories from the province. Dishes come with historical introduction, many a cultural insight, and the author's own experiences discovering and cooking the dish: all these factors make for a fine and well-rounded cookbook which goes far beyond the usual light Hunan coverage to probe the depth of Chinese culture and cuisine, making it a 'must' for any serious collection offering Chinese cookbooks beyond one or two basics.
Worthy successor to "Land of Plenty".......2007-06-10
Ms. Dunlop continues to amaze and delight with her second book. The current tome educates the reader in the disciplines of cooking (as well as) ancient Chinese history (Appendix: the Main Chinese Dynasties), language (Appendix: Glossary of Chinese Characters) and contemporary history (revolutionarily centric). Echos of David, Grigson and Fisher resonate. [Not unsurprising considering her Cantabrixian education! (superb bibliography)] I haven't yet tried any of the recipes, so cannot vouch for their efficacy - but, they have a good feel about them. Will become a classic by aficionados.
One of the best cookbooks.......2007-04-05
This is one of the best cookbooks I own. I received the book as a gift and I use it everyday.
Breathtaking, authentic, scholarly, beautiful.......2007-03-13
I cherish my copy of Dunlop's _Land of Plenty_, and had eagerly awaited this new book. I've cooked 15 or so recipes from this book so far, and all of them have been perfectly successful. My favorite so far is her rendition of red-cooked pork (Chairman Mao's Red-Braised Pork), and some others I've made which were wonderful were her Tiger-Skin Steamed Pork, Beef Slivers with Coriander, her unctuous & delectable Steamed Eggs, and a delicious dish of stir-fried baby greens & shrimp. Ooh, and another extraordinarily delicious dish: Stir-fried Zucchini with Salty Duck Egg Yolks. Yum!
I think that _Land of Plenty_ is still her best book, but this is a close second. The essays in _Land of Plenty_, for instance, are just superb, particularly the one about tea.
I'm wishing this cook & author a LONG life so she can continue to explore the food & food culture of China, and write many more books to share her learning with us.
Even Better than Her First Chinese Cookery Book!.......2007-03-02
I enjoyed her first cookbook on Sichuan cookery, Land of Plenty, and I like this second book on Hunan cookery even more, with even more helpful beautiful photos. As far as portion sizes, she states "all recipes serve two people with one or two other dishes and rice, or four people, with 3 or 4 other dishes and rice".
The Sichuan and Hunan cuisines differ from each other as New Orleans Southern food differs from South Carolina Southern cuisine, and yet both of Dunlop's cuisines are clearly hotter and spicier "Chinese" to our tastes. Hunan folks are said to like food with chilies "fire-hot-hot" whereas Sichuan's dominant style is a mix of chili hot and the peculiar "mouth numbing", from the Sichuan "peppercorns".
The Hunan recipes in this Revolutionary Cookbook are straightforward, nearly all ingredients can be obtained from a local Chinese or Asian grocery store. The only one I can't find is "purple perilla", for which Asian basil is not quite a substitute. Not a problem.
The 120 recipe instructions are for preparing simple, straightforward "comfort food", and the food comes out tasting very good. It's lighter, and not gooey, like the cornstarch-laden Americanized Chinese food.
Delights include: Spicy steamed pork buns, BBQ'd lamb chops, Changde Clay-bowl chicken, yellow cooked salt cod in chili sauce, with most fish dishes steamed. Try Chairman Mao's red braised pork, or one of it's 7 supplied variations. I think Ms. Dunlop overdoes the Chairman Mao bit, putting his cheery face on many, many pages for no good reason; it contributes little to understanding of him, or of the Hunan cookery. I'd rather have had more beautiful photos of food and other aspects of Chinese culture and people, instead of so many of Mao's images.
Have you had the traditional Hunan dish- "General Tso's Chicken"? Guess again! FYI, She met the accepted creator of this NON-Hunan dish, with added sugar for US tastes, created in the 1970's in New York by Hunan chef Peng Chang-Kuei! And yes, most Hunanese have never tasted this bogus, yet popular dish that is known in the USA as the "quintessential Hunan dish"! To adjust for tastes, she has both a Hunan version, and a USA version of Gerneral Tso's to choose from.
From her first book being shown to a Chinese friend of mine from Chengdu, who cooked from it and proclaimed it "the real thing" I know that Ms. Dunlop's current book is gonna be just as accurate. No, I do not currently have an authentic Hunan friend to vouch for the recipes, and I do not mind, I like what spicy hot things I have cooked so far!
Just as an aside- Her photo is only somewhat kind to her, it is an oldie, and she looks better than that in person. She clearly "knows her stuff"; I recommend meeting/hearing her on her book tour.
Buy this, and buy the Sichuan book, Land of Plenty, and cook and taste authentic Chinese "comfort food" as it tastes in China... It's a lot better than the cornstarch-laden "Chinese" food served in most US restaurants.
I look forward to her next books.

This book is a must-have!.......2003-05-22
This was my very first "Beatiful Cookbook". I used it all the time, until it mysteriously disappeared after a dinner I cooked for friends... I am a Chinese food junkie and felt lost without it until one day at an airport bookstore found it again and was overjoyed to pay FULL price and cram it into my bulging suitcase.
It was worth it! I had an asian friend who read the book and was amazed at how authentic the dishes are. While I haven't been adventurous enough to make some of the dishes, I still love the photos and history, and have many favorite recipies!
i've been there- and this is for real.......2000-03-06
This book encompasses all regions- not just Canton. And its genuinely authentic- just like what you would find at fine restaurants in China (i've been there). A lot of great regional recipes (good schezuan).
If i had to pick one cookbook for restaurant style chinese food, this would be it. Note, though, that: a) its authentic and assumes some knowledge (not a starter cookbook); and b) its not exactly homestyle comfort food. The dishes are spectacular, though. Beautiful coffeetable book.

This is not a cookbook for someone wanting to make quick 5 minute asian meals with minute rice, these recipes are as complex and wonderful as most asian food.

Book Description
In China the chicken represents the phoenix, the mythological bird that rose from its ashes and that symbolizes rebirth and reaffirmation. Because of this deeply held belief, chicken is served at every New Year celebration, every wedding feast, and every birthday dinner. The chicken is honored for its eggs, its meat, and the flavor it provides for stocks and broths. Because of the reverence for this bird, the Chinese prepare chicken in myriad ways. Chicken is steamed, baked, boiled, stir-fried, deep-fried, pan-fried, and roasted. It is served hot, cold, or at room temperature. No part of the chicken is wasted from its bones to its skin to its feet, a Chinese delicacy.
Now, renowned Chinese cooking expert Eileen Yin-Fei Lo, who has been called "the Marcella Hazan of Chinese cooking" by The New York Times, brings her love of Chinese cooking and traditional Chinese chicken recipes to American home cooks in The Chinese Chicken Cookbook.
The Chinese Chicken Cookbook brings together more than one hundred of the best traditional and modern chicken recipes of China from simple stir-fries to more elaborate celebration dishes. In chapters that pair chicken with noodles and rice and in chapters on soup, preparing chicken in the wok, and cooking it whole, readers will find dozens of delicious, easy-to-prepare delicacies. Recipes such as Two-Sesame Chicken, Hot and Sour Soup, Ginger Noodles with Chicken, Chicken Water Dumplings, Chicken Stir-Fried with Broccoli, Mu Shu Chicken with Bok Bang, Mah-Jongg Chicken, and Asparagus Wrapped in Minced Chicken offer new and flavorful ways to prepare chicken whether you're making a quick weeknight meal or having dinner guests on a Saturday night.
Although these recipes use ingredients that home chefs can find in the international section of a well-stocked supermarket or on the Internet, Lo includes the Chinese names for ingredients and recipes, rendered in beautiful Chinese calligraphic characters. Not only decorative, these characters can help you locate unfamiliar ingredients in a Chinese market. The Chinese Chicken Cookbook also has sections on how to select and clean a chicken, a detailed explanation of Chinese ingredients, suggested equipment (including how to properly season a wok), and how to cook a perfect pot of rice.
With wonderful family stories from the author's childhood in China, The Chinese Chicken Cookbook is not just a cookbook for your cookbook library, it is a source of culinary inspiration.
Customer Reviews:
Another excellent cookbook.......2006-12-09
Many of the recipes require a dutch oven and a boning knife (for meat from the chicken leg). There are over 100 recipes including stir fry dishes with melons.
I am particularly happy to find recipes for steamed chicken buns including the bun dough recipe and street dumplings that "were created by refugees from Shanghai who fled their city in the 1950s revolution and came to Hong Kong. They would set up portable charcoal or coal stoves in the streets and make these dumplings for people to lunch on. Later, many of these entrepreneurs went on to open restaurants."
I am collecting all of the author's titles as much for her old fashioned style as for her recipes. She makes me want to make my own pasta.
In my opinion, acquiring all of the author's cookbooks first before buying the other English language Chinese cookbooks makes an important foundation to understanding what you eat in America and how the food is cooked at home. Then proceed to the other cookbooks and hopefully to eating the more elaborate levels of Chinese cooking. I didn't pick up the author's cookbooks until very recently and only after learning that the author is from Sun Tak. I wish I had bought her books long ago.

Customer Reviews:
Excellent book with few flaws........2000-07-31
This is an excellent book for anyone serious about living a healthy and long life. The recipes are (for the most part) easy and delicious! There are, however, two minor problems I found in the book which staved off a 5 star rating. The first is some of the recipe instructions are vague and imprecise. While this can be easily bypassed by anyone used to cooking for themselves, for a young american used to fast food and moron-proof instructions some mistakes are un-avoidable. I still can't cook fried tofu as he suggests without it sticking horribly to my wok (which has undergone the procedure to make it non-stick.) The second problem is somewhat minor but a tad irritating. While he provides 81 chapters, one for each chapter of the Tao-Te-Ching not every chapter contains a recipe. Some of them merely contain descriptions of Dri yogurt and Tibetan barley bread without any recipes. In all fairness both of those meals would be impossible to fix since Dri milk is un-known in this country and Tibetan bread requires a brick oven so why include them at all? This was a little disappointing but all in all, I really do love this book and highly recommend it!
Excellent companion to a Taoist or Vegetarian practice.......1999-10-14
Do yourself a giant favor: BUY THIS BOOK; it offers simple, healthy food in accordance with the balance of nature. For those who are familiar with the healing power of food combining (discussed elsewhere), this book will offer a boon in terms of recipes and ingredient ideas. For those convinced of the importance of a healthy lifestyle, look no further. Mr. Saso's attempt to provide simple, healthy, nutritious, traditional Taoist cuisine succeeds. The book provides easy to follow recipes that are sure to satisfy any palate and purify any digestive system. It is in agreement with the practice of "eating to live" as opposed to "living to eat". It also offers some "food for the mind" in the form of meditative quotations from the Tao Te Ching.
Gluttons, gourmands, and other undisciplined or apathetic eaters, be forewarned, this book is not for you unless you are seeking a way out of the misery and drudgery of your personal eating habits. Say goodbye to post-dinner "tightness" in the belly; kiss those belly-bombers goodbye; away with those airy interludes and inopportune dashes to the loo. Those are a nuisance of the past. Human digestive systems were not meant to eat the way we eat in our modern society. That is a cold, hard fact; accept it. Say hello to an ancient diet; so ancient it is radical; so radical it is new; so new you can't believe it is so ancient; so practical and you begin to wonder why the rest of the world doesn't know about it. Then you wonder: "Why do I believe that the way I was taught to eat by my parents is the only true absolute way?" Buy this book. If not this book then get another, but enlighten your Self, learn the principles of food combining, and spread the word. Seek the Tao, learn the Tao---it will change your life for the better.
I wish you a healthy gastronomy and the resulting personal serenity it will bring for the rest of your life. You owe them to yourself, don't you think!
This book is a treasure..........1999-07-17
I have used this book for the past 2 years and my mental state and health have improved dramaticlly, I can't say enough about this wonderful book. The recipies taste good.. Most of the other books I have read are written by fruads or people with no real knowledge of Taoist beliefs and are usually New-Agers.

Brings back horribly painful memories.......2002-12-21
I blew every last penny of my life-savings on this godforsaken fad. To add insult upon injury, I bought this book hoping it would rescue me from my lonely world of debt and failed marriages. Boy, was I wrong. Had I known that the Beanie Babies were destined to travel the same road as the Pet Rock and Crystal Pepsi, perhaps I would have reconsidered these careless financial decisions.
And I couldn't agree more with my fellow reviewer's ("A reader from danville ill") opinion of this book.
If Ty is really suing he should back off.......2000-06-15
This ia a great idea and I view it as a different product entirely from BBs, which are stuffed toys. If Ty is suing, I wish he would back off.

Message From Les and Sue Fox (the Authors).......2007-09-03
Hi. It's been 10 years since Sue and I published the first edition of The Beanie Baby Handbook. The third and final edition (the cookbook) was published in 1998. In case you're wondering, we've attempted to publish an up to date book but Ty will not give us permission. (???) In looking over the Amazon listing, and people's comments, first, they made a mistake on the number of pages. This is a 218 page book, not a 40 page book. Each of the 52 recipes is a 2-page color spread with amazing photos created by Jeanette Long (still our neighbor and friend here in Wyckoff, New Jersey). Jeanette actually cooked, baked or prepared all of those foods, and brought them to a world class food photography studio. Kids and families love Jeanette's recipes, and in my opinion this is not only a wonderful book about Beanie Babies, it's one of the best kids' cookbooks ever published. Anyway, Sue and I are still incurable collectors. We are professional American art and rare coin dealers (19th & 20th Century), we build custom homes, and we manufacture a neat little calorie counter that you may see on TV in December or January. We've also developed a new product called Rare Coin Trading Cards, which we hope to launch as soon as we set up a national distribution system. We published Beanie Baby trading cards in 1998, but Ty asked us to stop when they began publishing their own cards. (Darn.) Beanie Babies were a big part of our life in 1997 and 1998, and I don't think we'll ever have another experience like that again. Although we did create a unique collectible known as autographed coins with two former U.S. Presidents (Ford and Bush) in 2001 and 2002. One of the reasons I posted this message is to tell the many people who write to us that we cannot publish a new edition of The Beanie Baby Handbook without written permission, or a license, from Ty. In 1997, they allowed us to publish the Unofficial edition, but that ended in 1998. Les and Sue Fox

My little mad thing...........2001-01-19
As heady and well-read as I appear to be, I still pick up an oddity now and then. Besides, my daughter isn't really interested in philosophy yet.
There's not a lot to say about Beanies. They're cute, but they are a highly manipulated market. This book is the one I have found that actually attempts to identify the number of beanies of a particular type. Trust me, Iggy with Rainbow tags is likely to be worth something, but Gigi will probably end up in the trash. The reason? Iggy had a total manufacture of only 250,000 and some smaller number of these had the switched tags. Gigi? I'm guessing, but I'll wager a cool 6 million or more made. This kind of information is, in my view, conspicuously absent from the mainline marketed books and magazines. The "Price" information they hand out is at best highly volatile on these little beauties, but the manufactured count can never change for a given beanie style/tag. From that view, this book will give you a grounding for the earlier varieties. I have a suspicion that Ty has made a concerted attempt to corner the periodical market and suppress these hard numbers. After all, driving out the competitors and keeping your customers listening to the "company mouthpiece" is an excellent way to make money. But from my perspective, you want the numbers if you plan on focusing on the beanies that will be valuable in the long term. Get a copy of this book if you can, if you are a beanie collector.
Personal advice? Clip off the hang tag and give Gigi to the kids to play with. Cruise the auctions for a good deal. Nuf said!

Helpful Organization.......1999-06-19
This book is very handy and helps organize my beanie collection. Now I'm waiting for more supplements for the new beanies and teenie beanies. Can't wait to get them into my binder.
Loved the book. Pictures are beautiful........1999-05-26
Very easy to organize my beanies. Now we need the updates for the recently retired beanies and the new beanies that just came out.
Great book.......1999-02-19
Tried four other books before I found this one. Best book to keep track of your beanies
