This is the best Thai cookbook I have found in the States, and makes the most authentic tasting recipes. Someone complained that surely it must not be authentic because of the lack of dried shrimp in the som tam and pad thai recipes. Well...while dried shrimp is normal in pad thai, it is not always included in som tam. I miss Thai food after having lived there for many years, and this is the only recipe book I've found that can reproduce my favorites and give me the taste of Thai food (which you don't find in many Thai restaurants!). Not 100% of the recipes are perfect, but they are by far and away close enough and you can adjust seasoning. The larp recipe is awesome. This is the one Thai cookbook I recommend to friends who want to do some Thai cooking.

I was lucky enough to be "adopted" by the owners of a local Thai restaurant who were trying to make a go of it in Sanford, FL. Their chef was amazing & this cookbook is the best resource I can think of to get anyone producing food close to that level. Additionally, McDermott provides cultural insights and details from her time in Thailand that help you get to know this graceful & hospitable culture.

Almost every recipe I have made out of this book has tasted fantastic and has been relatively straightforward to prepare (which is really saying something coming from a domestically inept college student who can burn water!). McDermott includes a wide variety of recipes, from the banquet-worthy to tasty noodle dishes that can be thrown together in 15 minutes, and uses authentic ingredients although substitutions are suggested for those without the good-fortune of having a local Asian supermarket. Unusually, many of the recipes turn out just as good if you halve the quantities (with the exception of the coconut cream in the curries) - a plus for those cooking for one or two, and often still work with a few more or less ingredients depending on what's in the pantry. While the large number of ingredients that need to be chopped and pounded for the green curry paste make it somewhat time-consuming to make from scratch, it is absolutely worth the effort - the green chicken curry is the best I've ever had, both in Thailand and at home.

We've been using this book as our Thai cooking bible now for eight years, from LA to Baltimore. We became so addicted we even bought a kaiffer lime tree (sadly, had to leave in LA.) We love the tome kai gia, the clay pot shrimp with bean thread noodles, crab fried rice and use the dipping sauce for beef to marinate pork ribs. Once you master the flavors, the recipes are easy to adapt to your taste. We add ginger to the dipping sauce, and cut down on the coconut milk in the tome kai gai. However you do it, it's an amazing cook book. You will need to find a Thai grocery store in your area, though.

This book is excellent for those interested in Asian meals but do not have a lot of understanding of the grocery list that goes along with it. Meals are simple, delicious and easy to put together.

I would recommend this book to anyone who enjoys Thai cuisine. Not your average cookbook, this book was informative about the ingredients and the regions where they are from. I tried several of the recipes and they turned out just like my favorite Thai restaurants.

I couldn't have said it much better than the above reviewers have. A great book that is foolproof, even containing photos of the ingredients in the beginning. You absolutely must try the green curry paste for your next attempt at curry, and find out what you have been missing. You will find that you can easily make better Thai food than the restaurant can offer, and experience true homemade Thai, the way it is supposed to be. Thanks Chat for a wonderful cooking cass as well...you were a lot of fun and I wish you good luck!

This is a great cookbook. The author does an admirable job of demystifying Thai cooking. The book begins with a very helpful description (including pictures) of the key ingredients used in Thai cooking, including helpful information on where to acquire them in the US. The recipes are then organized by region, and many entertaining stories and background of the recipes are provided. Recipes of eveything from appetizers and main courses to desserts are included, and are also well-indexed. In fact, the recipes are indexed by category as well. And yes, they taste great. My favorite is the chicken with cashews.

The author also teaches hands-on Thai cooking classes in the Bay area for a very reasonable price...

5 out of 5 stars Overcome Your Fears of Thai Cooking.......2002-05-13

I've long been a big fan of Thai food and culture, and have long enjoyed cooking too, but never had the guts to actually attempt cooking my own Thai food. After flipping through a few pages of this book though, I found the inspiration and magic touch to expand my culinary portfolio. The book is simple and straightforward with a good mix of comments on the culture and history behind the dishes, and a glossary that outlines all the basic ingredients that you might need for your arsenal. This section along with the illustrations and pictures helped me make the bold move to grocery stores I've never been to before, without the fear of looking lost in the aisles. The book made the whole process a lot of fun, and the ultimate reward was the finished product, which I have to say, was quite delicious, or as they say in Thai - Aroi Mak!

    Being half-Taiwanese, I was really interested in seeing (A)what recipes and (B)insights the author would have on Taiwanese holidays and holiday foods.

    I was sorely disappointed, on both points. The author seems curious in Taiwan's culture, but only in a very pro-West, "how quaint" sort of way, without any deeper understanding of Taiwan's festivals and holidays. The recipes are also approached in a very Western manner, and the recipes themselves are also very Westernized.

    In its place, I highly recommend books in the Wei-Chuan series, such as Chinese Snacks (Wei quan shi pu), Chinese Cooking Made Easy: With Simple Sauces and Dressings (Wei-chuans cookbook), Chinese Cuisine: Taiwanese Style, and Chinese One Dish Meals.

    This book was written by a woman who lived in Taiwan because her husband was transferred there for work. She is not knowledgeable enough to be writing a cookbook on Taiwanese cuisine. If you are Taiwanese or are familiar with Taiwanese cuisine, you will realize this right away when you look at her recipes. The recipes are MISSING KEY INGREDIENTS that make the dish taste the way it should. For example, the oyster omelet recipe does not have sweet potato starch in it. This is a key ingredient which makes the Taiwanese oyster omelet taste the way it does.

    In addition, there are NO pictures and written from a point of view which would make me suspect that the author got the recipes from the internet or quickly jotted down the recipes instead of actually cooking/testing the recipes and trying them out.

        I love this book - it is one of my favorite cookbooks. This has delicious easy to make recipes including many variations on noodle soups, fried rice, curries, appetisers etc. The recipes taste authentic, such as the Singaporian laksa - which is as good as any I have had in Singapore
        It is very modern, the recipes are trendy, and the food tastes restaurant class. After cooking out of this cookbook it is very difficult to enjoy going out for Asian meals again - much nicer to cook it yourself using this book!

        Ms. Hutton offers reliable, clear recipes in a beautiful book, with clear advice as to ingredients, combinations, and cooking techniques. Lush photographs make everything look scrumptious. Good design keeps one recipe together on one page. I have had very good results with the three recipes I have tried. I bought the hardback because I expect to be using this book often, and appreciate the author's identification of recipes that require extra time and effort--a whole chapter. Another approach I appreciate is a good use of English that is not too British, not too American--but comprehensible to both, I hope. I am an American cook but sometimes use metric measures and having both is helpful.

        Not only is this book beautiful to look at, the recipes produce the most delicious (and authentic tasting) food. The simple recipes are easy enough even for people who aren't that confident in the kitchen (like my spouse); the fancier ones are perfect for dinner parties. Highly recommended!

        Access to a well-stocked Asian grocery will be required for successful appreciation of GREEN MANGOES AND LEMON GRASS; but readers with such access will find this a fine introduction to the range of Southeast Asia's dishes, from Thailand's spicy cuisine to the French influences of Vietnamese dishes. Enjoy a Mimosa Rice from Vietnam spiced with coconut milk, fish sauce, Chinese sausages and onions; or a Spicy Minced Beef from Laos with lime juice and lemon grass. Beautiful color photos abound.

          Cons: Writing can be repetitive. Brand names are used ad nauseam, which leads me to wonder if Mr. Green was being compensated by the trademark owners.

          5 out of 5 stars Not just for Old Timers.......2007-05-26

          This is a fun book with all kinds of trivia, stories about forgotten favorites (Erector Sets) and hard to find goodies (old fashioned candies). It has a huge variety of home recipes for lotions, soaps, balms, antacids and more and the recipes appear to be fairly simple. It's light, full of photos and easy to read.

          I picked it up for the recipes but have found it kind of hard to resist. I recently read it out loud to my husband on a trip to the ER -- trying to distract him and keep us both awake while we waited for him to be admitted (he's fine now). After we got home, he swiped it and is reading it himself.

          If you like places like Cracker Barrel's old country stores, you'll really get a kick out of this book!
