Delicious, easy, healthy.......2007-09-26
The book is large and sturdy and stands up well to typical kitchen abuse. It includes information on shopping healthily for two, as well as menu suggestions. Recipe chapters include: dinner salads, soups & stews, vegetarian mains, poultry, fish & seafood, meat, and accompaniments. In keeping with the healthy aim of the book, desserts are relegated to a several-page portion of the accompaniments chapter.
Small symbols mark particularly low-carb or high-fiber recipes. Each recipe estimates both "active minutes" spent preparing the dish as well as total minutes. There are make-ahead notes and detailed nutrition information. There's also a "nutrition bonus" note that points out any particular vitamin benefits found in that recipe. For example, the "Caesar Salad Three Ways" includes plenty of Selenium, Vitamin C, Vitamin A, and omega-3s (it also comes with a basic recipe as well as a shrimp and a chicken variation--hence "three ways"). Sometimes extra notes are included, for example, the Caesar Salad has a side note with instructions on making your own croutons. It also includes a delectable-looking photo; while photos aren't included with all of the recipes, there are certainly enough to make your mouth water!
I personally found not all of the flavors to my liking. Some were a bit bland, and some tried to make up for blandness in ways that just didn't appeal to my palate. A Lentil & Chicken Stew appealed to a friend of mine who particularly prefers bland food, but I just couldn't enjoy the lemon, dill, and chicken flavors together. On the other hand, she and I both loved the Creamy Artichoke & Spinach Soup, which takes a rather unusual approach to making a thick and creamy soup out of very healthy ingredients.
There's a really nice Grilled Peach Sundae recipe in the quick desserts section that we heartily enjoyed. While it's true that I found a few of their recipes to be not entirely memorable, on the whole they're quite good. The Eggplant-Cheddar Bake, for example, disappeared very quickly!
My only reservations with this book are definitely taste-dependent. If you don't enjoy the kind of semi-bland, lemony-chicken type of recipe that shows up in a lot of healthy eating cookbooks, then there will be some recipe sections in here that won't appeal to you. That said, there are plenty of people who will enjoy those recipes, and even the rest of us will find lots to work with in here!
Versatile and delicious as well as healthy and quick.......2007-08-04
EatingWell Magazine aims these healthy and varied recipes at the empty nester who doesn't want to spend a lot of time in the kitchen or end up with leftovers. Preparation time (active and total) and nutrition info accompany all recipes as well as make-ahead instructions where applicable.
However, convenience and diet aside - these are versatile and delicious recipes. There's a whole chapter on dinner salads - Cobb Salad, Southeast Asian Scallops and Greens, Sweet and Salty Beef Salad, Orzo Salad with Chickpeas and Artichoke Hearts. Every one I tried was a winner and all came in at under 30 minutes.
Other must-have-again dishes include Lemony Asparagus Pasta, Creamy Artichoke and Spinach Soup, Marmalade chicken, Shrimp and Shiitake Stir-fry, Grilled Steak with Beets and Radicchio.
A few I plan never to try, like Turkey Fingers with Maple-Mustard Sauce and Asian Salisbury Steaks, but these are outnumbered by intriguing dishes like Pork Tenderloin with Gingered Mango Sauce and Pomegranate Duck. The book ends with chapters for "Quick" sauces, sides and desserts as well as a vegetable shopping and cooking guide and notes on cooking techniques and special ingredients.
Highly recommended for anyone with a small household.

I have dozens of cookbooks and it takes something special for me to keep one on my kitchen counter. This one certainly qualifies. I've tried several of the recipes and all were delicious and it is so nice not to have a ton of leftovers. I love that the nutritional information and suggested sides and included for each recipe.
What really makes this book a winner for me are the Notes. Every time I read an instruction or ingredient I'm not quite sure about, there is a Note exactly on point, anticipating my question. In addition, the tips regarding shopping in small quantities are very valuable.
If you're looking for a cookbook with delicious recipes and smaller quantities, don't pass this one up!

We have used this cookbook about 4 times a week since we got it.
Perfect portion sizes for 2 and lots of tasty good for you ideas.
This is the best healthy cookbook you could get if single or a couple.
Just double up the amounts for a family if you have a couple kids.

I have been an Eating Well magazine subscriber for years, so I'm already a fan of their recipes. I find myself using this cookbook at least 4 or 5 times a week. The recipes are great tasting, easy to assemble, and often require even less time than the estimate given. The portion control of making just 2 servings is an excellent way to maintain recent weight loss for both my husband and myself. (No second helpings - but definitely enough to satisfy hunger!) I've also given the book as a wedding gift - it has beautiful illustrations as well as a wealth of shopping and ingredient tips. When healthy is this good and easy, why eat any other way?!

Unrealistic.......2007-09-29
I ordered this book because, having graduated college and tired of Ramen, I needed to know how to cut, mix and heat real food. The produce and ingredient recommendations are not for the novice cooker. It's easier to eat fat food than to eat healthy, so unless you're serious about making a change in the way you shop, frequency in shopping, and flavors you're accustomed to, get your recipes from your mom and the internet.

Considering that the title itself implies the simplicity of the recipes, I feel a little bad about complaining about the quality of this book, but hey, I will anyway.
If you are a beginning cook and have never made tuna salad and/or have thought to add something other than mayonnaise to it, if you have never made a meatloaf (low fat?) or boiled a noodle, then this would be a good book for you, otherwise, the boringness of the majority of the recipes will make for a very dusty book on your shelf.
The sample recipes featured on the Amazon "Look Inside" function seemed interesting but have turned out to be the rare exception that stand out from the dull, simplistic everyday recipes that any good cook could throw together without thinking.
The crappiness and lack of inspiration in this book would make even Rachel Ray laugh out loud.

as a single person who hates leftovers and freezer burn, I am always looking for recipes that will make just enough for dinner. I have bought 6 or 7 cookbooks that serve 1. this cookbook is one that I actually use. It has a variety of recipes and is easy to follow. These are recipes that you can make after a stressful day at work and know that you will have good food with a minimal about of fuss.

I've never reviewed anything before, but after finishing my delicious Orange-Glazed Pork Chops & Sweet Potatoes, I couldn't resist anymore. These recipes are healthy, delicious, and easy to make. The small portions mean that I can try something, enjoy it, and not have leftovers going bad. I haven't run into a bad recipe yet. Check it out!

As a senior in college, I wanted to learn more about cooking but usually fell back on eating meals that were frozen or standard because any other cookbooks were geared towards 4+ diners, and I don't have the fridge space to save tons of leftovers. Additionally, my fiance and I have been interested in eating healthier for some time, but we were both novice cooks who felt uncomfortable in the kitchen. I received this cookbook for Christmas from my mother and have been continually grateful since!
Though there are no pictures (I like visuals!), I can easily follow her recipes. There are some that look a little ambitious, and I plan to work up to that when I feel more comfortable with my kitchen; in the meantime, there are more than enough quick, easy meals that I can feel GOOD eating (hey, "healthy" is in the title!). For someone like me who loves to try new tastes, she includes a wonderful variety of dishes from good-old Southern home cooking to chic European eating.
She also includes the nutritional values for every serving, which I think is an excellent feature. As many reviewers have mentioned, she divides the recipe into columns, so you can decide to cook for 1, 2, or 4. I thought, "This is cooking healthy, the portion sizes will probably be tiny." Quite the contrary! I like to eat (as does my guy), yet we ALWAYS have leftovers when we make a recipe for 2. This book will be the staple cookbook in my kitchen!

Great recipes, difficult layout.......2007-10-04
I love lots of the recipes in this book. However, it is frequently hard to find them again under the somewhat vague chapter titles such as, "Fiber Makes Your Day," "Blending East and West," "Mineral Rich Recipes." If you have a favorite recipe, it's sometimes difficult to find it again. You have to remind yourself whether or not it's a good enzyme food or perhaps a macrobiotic something that caught your eye. Forget trying to find it in the index. I've highlighted the recipes that I really like so that I can find them again without resorting to flipping through all the pages again. Also, there isn't a whole lot that's specifically indicated as being beneficial for pregnancy--though I am sure lots of the recipes are great. Overall, it's a great cookbook--the layout and organization just leaves a bit to be desired.

This cookbook features healthy, interesting recipes for two that can be prepared quickly yet don't rely on a lot of convenience foods. Live alone? Pack leftovers for lunch the next day. If you like "comfort-style" food but don't like all the calories and fat this is the book for you!

My husband and I have made several recipes from this book, and they've all been very good. Directions are easy to follow and the meals are tasty. When we're cooking for more than just the two of us, it's easy enough to just double the recipes. We like to watch what we eat, so it's great to have a cookbook that includes calorie count and nutrition information -- most cookbooks I've seen don't do that. The one thing I would like to have seen the author do differently is to include the nutritional information based on weight (eg. 3 oz. portion) or a measured portion (eg. 2 cups), rather than just "per serving." But overall, it's a great book.
Misleading book title.......2006-11-10
I was surprised and annoyed at how many recipes there were for many more servings per recipe than two. This book is called Healthy Cooking For Two and often strays far from two servings. This book was not correctly titled and was at best deceptive.

The recipes are easy to follow, although they require ingredients I wouldn't normally have around the house. That was the only difficult part. Then again, no one said being healthy was easy.
I reccommend this to anyone who wants to eat healthy and doesn't mind working a little for it.

This is an excellent cookbook for anyone wanting to eat healthy, but not spend hours in the kitchen. The results are extra tasty and there is no guilt because every recipe has the calories, fat, etc. printed on the page! I have had success with every recipe, and it is by no means a sacrifice to eat these healthy dishes. I checked this book out from the library, and after making several recipes I had to buy a copy to keep! Get a copy today if you want fast, easy, and very delicious recipes!

This book seems more like a collection of recipes from those grocery store checkout lane cookbooks but without the the creativity - or any pictures at all. While the book does try to focus on low-fat, there doesn't seem to be much use of fresh ingredients, instead relying on canned or pantry items. This book would better serve someone who hates to cook but would rather cook at home than eat out or someone who is a beginning cook. I am not a gourmet, but was looking for something a little more creative with the use of fresher ingredients. I was dissappointed with this book.

As a neophyte cook, this book was excellent. I love the Indonesian chicken and the Angel Hair Pasta Primavera. I didn't know eating healthy could be so easy. True, some of the recipes are not so light, and some I choose to not make so light, but overall, this book was wonderful! I went from novice cook to feeling like a gourmet in a few weeks.

If you consider hydrogenated oils (Margerine-Butter buds), and canned foods that are in some of the recipes healthy. Also Microwave cooking? This book should be called 30 minute meals.
