I definitely thought this product was the textbook...I was wrong. This is only the activity book that suppliments the textbook. I just did not pay close enough attention

I had to buy this book for my Quantity Foods course as a part of my Dietetics major. I actually liked the book, and I am going to keep it for later use. I thought the book was organized very well. Some of the charts in Chapter 2 and 5 that we used quite often were a little hard to find (because there are so many!).
It also presented a good overview of things you wouldn't think would be in the book, such as the school lunch program, etc.

I had seen this book at a friends business and thought it was good. Since I have ordered and received it I have had the chance to really review the contents and find it one book that I can use daily. The CD rom is also fantastic in the number of recipes it contains. One nice feature is that you can size the recipes to what you need. Another great plus. Well worth the money. Tom Elliott, CEC

This book is so helpful to me. I'm a new head cook at a Public school and plan to use many recipes from this book. Besides the great recipes it helps me with Nutritional planning, Variety menu planning with eye appeal, specific food information such as heating temps and storing food, and recipe adjustment. This book will be a tool I will use daily at work. I love that each recipe has the nutritional values per portion.
A vital MUST HAVE handbook for professionals!.......2003-06-09
Whether one is cooking in a restaurant or a school kitchen, this is the most valuable handbook. You'll want it at ready reference. I know, because never a week went by that I didn't consult it while running my bakery/deli in the Oregon Cascades.
I must confess that I didn't tell customers my recipe source. I preferred they think me a genius or as having come from a family steeped in cooking history. They knew I was no genius (hell, they knew I wasn't even very smart) but they did like the foods we provided. And, when I decided to produce a new, tasty meat pie, it was this book that I consulted to improve upon my concept.
Choose not to buy this book and you probably are never going to know what you don't know. Choose not to consult it while it sets on your shelf will probably endanger your relationship with your harshest critics.

Mr Food Does It Again!.......1999-03-22
I have never bought a Mr Food's cookbook that I was disappointed in or tried a recipe of his that didn't work and that goes for this one too! Because I love extending hospitality and often have additional dinner guests, this book will sure be a big help. It has themed menus for every week of the year which focus upon those food items that are in season. Not only are there menus & recipes for all our favorite holidays but those minor & forgotten ones, too! And like all his cookbooks the recipes call for easy to find ingredients & with easy to follow instructions. Like always.."OOH IT'S SO GOOD!!"

In the Introduction, Wallace suggests that certain enduring business principles are analogous to a lighthouse which helps ships (and their captains) to make their way through dangerous situations. These principles provide entrepreneurs "guidance and safe passage as they navigate their way through the tight straits of the economy and successfully dock their ships at the port of entrepreneurial success....The purpose of this book is to provide guidance and understanding on the underlying business strategies that impact black entrepreneurial success in America." In fact, most (if not all) of the 52 principles can be of substantial benefit to anyone. Wallace organizes his material within four Parts, suggesting a program which has a one-year timeline:
Principles of Entrepreneurship Preparation [Weeks 1-13]
Principles of Building Entrepreneurial Success [Weeks 14-26]
Principles of Entrepreneurship Maintenance [Weeks 27-45]
Principles of Self-Actualization [Weeks 46-52]
As Wallaces explains, these various principles are introduced to the reader through "short, heartwarming true stories that were shared with me by successful black and minority entrepreneurs over the past twenty years. Each has an accompanying principle to be meditated upon for a week." Each of these stories illustrates how an individual was introduced to the principle and how she or he was able to leverage the event to help achieve a specific goal. Following each goal is a technical analysis of the pertinent principle.
One of the books greatest benefits is derived from a "Wisdom to Take Away" summary at the end of each chapter. For example, here is a portion of one of four mini-commentaries provided at the conclusion of the chapter devoted to Week 1: "Despite the difficulties, all of us are endowed with three types of assets: time, talent, and treasure. All of us are provided with 24 hours in each day to embrace and utilize these assets." Wallace is quite correct when suggesting that an entrepreneurial venture shares much in common with a voyage. Hence the appropriateness of the lighthouse metaphor. While reading the book, encouraged to think in terms of the one-year timeline while urged to focus on significant details in appropriate sequence, the reader really does have the feeling that Wallace is his caring as well as knowledgeable navigator. I suggest that those who share my high regard for this book also check out Marc Allen's Visionary Business. Both books share much in common (eg thoughtful, well-written, practical, and reassuring) even as they approach similar subjects from somewhat different perspectives. For those (regardless of race or gender) who are about to begin or are now embarked on an entrepreneurial "voyage", the two books are essential resources.

Soul Food: 52 Principles Of Black Entrepreneurial Success is an informative guide for the reader who is facing the special challenges shared by black Americans seeking to engage in an entrepreneurial enterprise in today's highly competitive local, regional, national, and global marketplaces. Robert Wallace has organized 52 basic principles for business success into four strategic categories (Preparation, Development, Maintenance, Self-Actualization) making Soul Food exceptionally "user friendly". Soul Food is highly recommended, essential reading for those seeking tangible and immediately applicable solutions to their problems as black businessmen and entrepreneurial.
